Earth Day!

For Earth Day, we had the kids plant some flowers. Grandma Liz sent some cute Spider-Man and Princess planter kits. Colin and Meli are so excited to watch the growing process. Colin is learning about plant life at school as well...so it is perfect timing.

I finally changed my hair. Highlights!!!  I have only done actual dye once before. So, a change was needed. Hopefully, I will have the guts to chop it off here soon!

Lately

 

We had a fun weekend with the kids. Taking advantage of the beautiful weather we worked in the yard and played outside for most of it. Everyone helped me weed, which was so nice. I had winter veggies, but did not do much weeding in that area over the season. It was out of control! So thankful for my little helpers.

On Sunday, the kids and I went to a nursery that has animals and a playground. I am so excited to get the next stage of veggies going. I was able to get most of them in the beds. I just need to pick up a few more. Will wants to get a tree or two that produce something to eat. I saw an apple that stays in a pot that I want. It self pollinates too. Will wants either an almond, fig or lime tree. I think an almond tree would be neat and useful. I also saw an olive tree that was neat looking.

 

 

I have been really enjoying my workout routine. I set up a gym in the garage. I hate the idea of paying to go somewhere when I have everything I need. Plus, I am less likely to do it if I have to drive to do so. Meli was my cute little yoga partner. She was having fun trying the different poses. She created a few of her own.

Meli is back to liking skirts and her hair done. Never thought I would say this, but yay!!! I missed her cute outfits and doing her hair. She still wants her hair down like Rapunzel most of the time.

Colin is playing soccer again. He has improved so much!

Successful Recipes: Grilled Mojito Chicken

I tried a new recipe from my book that my mother (Liz) bought me: George Stella's Still Livin' Low Carb. I like the book quite a bit. Of course, I tend to change a few things and do not go as extreme with the low carb. We have a few days throughout the week that we eat low carb, but not as low as in the book. Also, I am not a fan of using artificial sweetners. I have read up on Truvia and will use that if needed. His books have great ideas that can easily be tweaked if desired.

This time I made Grilled Mojito Chicken. I am not a huge fan of his website, but here is the recipe http://stellastyle.com/site/2012/10/30/grilled-mojito-chicken/.

Excuse the presentation but it was delicious! This is Will's plate. I cannot eat that much meat! 

I will use this Keto Chocolate Mousse recipe on the days where we have low carb, medium protein, and high fat. This helps with Will's chocolate desire. It taste OK, but it is not really my thing. Will likes it though. This is not the actual recipe I used, but it looked basically the same.

Of Late

 

I finished another sewing project. This one was actually easier than the dress, but I still learned a few new techniques. I made the skirts a little big (size 4), so that she could wear them for a while. Her measurements does not even register on the pattern (my little skinny Minnie). The top picture is material my mom bought when I was a kid. I played with a lot of my mom's sewing stuff, so it is neat seeing things I remember resurface. The skirts is a little old fashion with the trim, but I love it!

Meli wanted her nails done as monsters. I am so not good at painting nails, but I am learning. We used glitter and craft eyes. She loved it!

Colin had swimming lessons the past two weeks. I was able to go to half of them. It was nice helping out. He is excited to use his goggles and go under the water. He is very timid with water, so this is big! They were both trying it out in the bathtub.

 

It was a pretty weekend. We took advantage of the sunshine and headed to a playground. Love these two so much!

 

Colin's reading has improved so much. I cannot believe how much he can read now. It is so crazy how it just clicks. Meli is pretending that she can read too. Adorable.

Easter Celebration

Easter was such a fun holiday this year. The kids were super excited about going to Sunday service, the Easter bunny, and egg hunt.

As usual, we decorated eggs the night before with Grammie. Someone stole one of my eggs (so sad)...we never did figure out who did the extra blue one. I think it was Grammie. Who also won the ugliest egg contest. It was pretty bad.

Sunday morning, the kids woke up anxious to see if the Easter Bunny hid the eggs (he is a jokester). He did! They had a great time finding all of the eggs and their baskets. Meli got a new princess crown that she wore the WHOLE day! Well, I did make her take it off for church service.

 

After church, we headed to P-Pa and Mi-ma's for Easter dinner and an egg hunt. It sprinkled a bit but really was a pretty day. Meli loved finding the eggs. I was so happy that she wanted to wear the dress I made her. (Proud mama moment).

I love these two so much. My little rays of sunshine.

Meli was pretty good at finding the eggs. Probably helped that she was in the little kids area, which consisted of Miles (who is one). We made sure it was pretty even though. She was really good about helping him out.

 

Colin did great! He has come so far from his first egg hunt (when he was 1)...when he would put an egg in his basket, then take it out of the basket. Over and over and over. It was so cute. He is getting so big.

Uncle Greggie hid the eggs. He probably cheated a bit and helped Meli. Who could resist though!
